What is freeze drying?

Freeze drying, also known as lyophilization, is a process that involves removing the moisture content from food or other substances to extend their shelf life. In the case of bone broth, freeze drying helps preserve all the valuable nutrients and flavors without the need for artificial preservatives. The process starts by freezing the liquid bone broth at extremely low temperatures.

Once the bone broth is frozen solid, it is placed in a vacuum chamber where the temperature is slowly raised. This causes the ice crystals in the frozen broth to transition directly into vapor without passing through the liquid phase, a process known as sublimation. By removing the moisture through sublimation, the bone broth retains its original flavor, nutrients, and aroma. The resulting freeze dried bone broth can be stored for a long time without refrigeration and easily rehydrated by adding hot water when ready to enjoy.
